Peanut Butter Bars:
Preheat oven to 350.
1 cup softened butter
1 cup sugar
1 Tbsp. Vanilla
1 1/2 cup peanut butter
1 1/2 cup brown sugar
3 eggs
3/4 tsp. baking soda
3/4 tsp. salt
1 1/2 cup flour
2 1/2 cup instant oatmeal (or old fashioned ones and chop them up)
Cream butter, sugars, and vanilla. Add eggs and peanut butter, blend well. Add dry ingredients. Grease jelly roll (large cookie sheet). Spread mixture on pan evenly. Bake for 20 minutes at first and then keep a close eye on it. You want to bake it til the edges are light brown. Do not over or under-bake. Cool for 15 minutes and middle will fall as it cools.
Spread a thin layer of peanut butter over it, then top with Chocolate Frosting. Cool completely
Chocolate Frosting:
1 lb. powder sugar (3 1/2 cups)
1/2 cup milk
1/2 cup butter (or one stick)
1 Tbsp. Vanilla
1/4 cup cocoa (add more for a more chocolatey flavor)
Melt butter, then mix everything in for a smooth frosting
